Homemade Fruit Popsicles with Added Coconut Milk

Summer is here! Enjoy this tasty, nutrient-filled, very cooling summer snack!

This delicious snack is filled with great nutrients and does not contain gluten, dairy, soy or any artificial food dyes or additives.

Ingredients:

  • 1 can (13.5 oz) of full-fat coconut milk

  • 2-3 tablespoons of honey or maple syrup (adjust to taste)

  • 1 teaspoon of vanilla extract

  • 2 cups of mixed fresh or frozen fruit (such as strawberries, blueberries, mango, or pineapple)

Instructions:

  1. Prepare the Fruit:

    • If using fresh fruit, wash and cut it into small pieces.

    • If using frozen fruit, you can use it directly from the freezer or let it thaw slightly for easier blending.

  2. Blend the Coconut Milk Mixture:

    • In a blender, combine the coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth.

  3. Add the Fruit:

    • For a swirled effect, you can layer the fruit and coconut milk mixture in the popsicle molds.

    • Alternatively, you can blend the fruit with the coconut milk mixture if you prefer a smoother texture.

  4. Fill the Popsicle Molds:

    • Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze.

    • If you want a more textured popsicle, add pieces of fruit directly into the molds before pouring in the coconut milk mixture.

  5. Insert Sticks:

    • Place the popsicle sticks into the molds. If your molds don't have built-in sticks, cover the molds with foil and poke the sticks through the foil to keep them in place.

  6. Freeze:

    • Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

  7. Unmold the Popsicles:

    • To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds to loosen them.

Tips:

  • Sweetness: Adjust the sweetness by adding more or less honey or maple syrup according to your preference.

  • Fruit Variety: Mix and match fruits to create different flavor combinations. Berries, tropical fruits, and stone fruits all work well.

  • Texture: For added texture, you can mix in small pieces of fruit or shredded coconut into the coconut milk mixture before freezing.
