Summer is here! Enjoy this tasty, nutrient-filled, very cooling summer snack!
This delicious snack is filled with great nutrients and does not contain gluten, dairy, soy or any artificial food dyes or additives.
Ingredients:
1 can (13.5 oz) of full-fat coconut milk
2-3 tablespoons of honey or maple syrup (adjust to taste)
1 teaspoon of vanilla extract
2 cups of mixed fresh or frozen fruit (such as strawberries, blueberries, mango, or pineapple)
Instructions:
Prepare the Fruit:
If using fresh fruit, wash and cut it into small pieces.
If using frozen fruit, you can use it directly from the freezer or let it thaw slightly for easier blending.
Blend the Coconut Milk Mixture:
In a blender, combine the coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth.
Add the Fruit:
For a swirled effect, you can layer the fruit and coconut milk mixture in the popsicle molds.
Alternatively, you can blend the fruit with the coconut milk mixture if you prefer a smoother texture.
Fill the Popsicle Molds:
Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze.
If you want a more textured popsicle, add pieces of fruit directly into the molds before pouring in the coconut milk mixture.
Insert Sticks:
Place the popsicle sticks into the molds. If your molds don't have built-in sticks, cover the molds with foil and poke the sticks through the foil to keep them in place.
Freeze:
Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.
Unmold the Popsicles:
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds to loosen them.
Tips:
Sweetness: Adjust the sweetness by adding more or less honey or maple syrup according to your preference.
Fruit Variety: Mix and match fruits to create different flavor combinations. Berries, tropical fruits, and stone fruits all work well.
Texture: For added texture, you can mix in small pieces of fruit or shredded coconut into the coconut milk mixture before freezing.
Enjoy your refreshing homemade fruit popsicles with coconut milk!
