Kale Yeah! Tips for added Veggies!

KALE YEAH! APPLESAUCE

The age old question for every parent, throughout time….

HOW DO I GET MY KID TO EAT MORE VEGGIES?!

When I was asking myself this the first time around with kid number 1, I would default to those veggie pouches that had fruit and veggie purees mixed together. They were brilliant! Easy, tasty, and contained veggies.

Now, with two kids, and a plethora of other responsibilities, not to mention a grocery budget, and being way more concerned about the quality of the veggies my kids eat, I’ve started getting a little more creative with my veggie sneaking techniques.

And my very favorite (not to mention that of my kiddos) is my Kale Yeah! Applesauce.

It’s so, so, so easy to make, doesn’t cost a bundle, and the kids devour it. Plus, it makes for a great ingredient in my Cinnamon Raisin Cassava Flour muffins. It also makes a great topping for yogurt parfaits and smoothie bowls, or can be blended into other frozen veggies like sweet potatoes or cauliflower as part of a smoothie or smoothie bowl base. Adding a scoop of your favorite protein powder right before eating makes this a balanced powerhouse meal or snack as well! 

AND OF COURSE, it’s incredibly tasty all on it’s own.

But the best part? There’s no absolute measurement on making this. If you don’t have blueberries, you can use cauliflower or zucchini. One day I threw a half a roasted beet in! Delicious. And, nutritious. Win-Win.

Kale Yeah! Applesauce

(Vegan, Paleo, Keto)

makes 1 quart

INGREDIENTS:

8 apples

⅔ cup blueberries, fresh or frozen

5 oz kale, fresh or frozen (OR cauliflower, sweet potato, zucchini, summer squash, beets)

1 teaspoon lemon juice

Coconut cream

2 tablespoons cinnamon or pumpkin pie spice

Pinch salt

INSTRUCTIONS;

Core apples and cut into quarters. Add to instant- or crockpot along with blueberries and kale.

InstantPot- Cook on high pressure for 5 minutes. Allow to naturally release for 5 minutes, then quick release.

Crockpot-  cook on high heat for 1-2hours, until apples are super soft.

Transfer everything to blender or food processor, or use an immersion blender in the instant pot or crockpot. Blend until desired consistency is achieved. Transfer to quart mason jar or other glass container. Keeps in the refrigerator for 2-3 weeks (if you don’t eat it before then!)
