Back to School Lunch Box Ideas

Now that school is back, trying to figure out healthy foods to send the kids can be challenging. Here are some great ideas that are free of all the common allergens!

  • Carrot, Celery or Jicama Sticks and hummus

  • Jicama Tacos

  • Fresh fruit or fruit salad with Whipped Coconut Cream for dipping

  • Sunflower seed butter (or other seed/nut butter) and apple slices or rice cakes

  • GF Crackers and sunflower seed butter

  • Grilled Chicken -can be sent in a thermos

  • Cold cut roll-ups with avocado spread, using Food for Life or Rudi's GF tortillas

  • Guacamole and chips

  • Smashed avocado mixed with lemon juice, salt and pepper and vegetable sticks

  • All natural food bars such as LaraBars, Kind Bars and JERF bars

  • Hard boiled eggs

  • Sunflower butter on Gluten Free bread with organic jam

  • Any soup, stew, chili or spaghetti—send in thermos

  • Nut butter & GF pretzels

  • Nut or seed butter with sliced bananas or pears

  • Cubed food lunch – kids love finger foods so cube up cooked meat, boiled sweet potatoes, melon, and brownie cubes for dessert.

  • Rice and beans

  • Salad with any toppings your child likes – grilled meats, dried fruits, veggies, avocado, nuts, etc and send a little container of herbed oil or vinaigrette.

  • Trail mix—mixture of walnuts, almonds, sunflower seeds, pumpkin seeds, Enjoy Life Chocolate Chips, dried fruits, etc

  • Meatballs (you can hide anything in a meatball!)

  • Quinoa with black beans (quinoa can also be used as a hot breakfast cereal with fruit and cinnamon)

Many meals can be made ahead of time and frozen. Also, during the school year, crock pot meals are very common in our house. On busy nights such as the boys’ karate nights, we can have everything ready when we get home. Make extra to save for the lunches through the week!
